Tremonti Ristorante – Salmon Cooked in Papillote

♦ Place fresh salmon skin side down on parchment paper, put salt, pepper, scallion, butter, thyme, lime segment and white wine on, then fold the parchment and bake at 350 F in a preheated over for 12 minutes. Meanwhile, blanch the leeks, red pepper, corn, asparagus and sate with touch of butter.

♦ Make a bed of leeks, red pepper, and corn in the middle of the plate, open parchment and place salmon and asparagus on top. Garnish with potato chips and fresh parsley.

  • fresh salmon filet (7 oz)
  • thyme  (1 tsp)
  • scallion slices  (6)
  • butter cubes  (2)
  • stalk leek cut in 1/2 inch (1)
  • red pepper, diced (1)
  • corn (2 tbsp)
  • asparagus (3)
  • potato chips (1 bag)
  • pinch of salt (1)
  • pinch of fresh ground black pepper (1)
  • lime segment (1)
  • white wine (1 cup)
  • parchment papillote (1)
