Tresca Trattoria – Cedar Plank Shrimp, Swordfish & Roasted Vegetables

In a bowl, toss the jumbo shrimp and swordfish with olive oil, lemon zest, lemon juice, salt and pepper and set aside. Layer the bottom of the cedar plank with the onions, making a firm, flavourful bed. Spread the additional array of vegetables on top. Season the arrangement with more salt and pepper, olive oil and a hint of extra lemon juice. Add the jumbo shrimp and swordfish on top.

Place the cedar plank in your barbecue, with half of the burners set to medium heat, leaving it on the opposite unheated side. Let the fish smoke for 40 minutes until it’s slightly firm and the vegetables are perfectly cooked. Add a hint more olive oil, fresh lemons and serve.

Makes 6 Servings

1        cedar plank, soaked for 24 hours, minimum
4        jumbo shrimp
6 oz   fresh swordfish
grated lemon zest
1/2     lemon, squeezed
1        garlic, minced
1/2    red onion
4       pieces of asparagus
1/2    red bell pepper
1/2    yellow bell pepper
1/4    of small zucchini
1/4    of small eggplant
salt and pepper to taste
1/4   cup olive oil
